This is our 1000th batch to come out of To Øl City, so naturally, we wanted to put on our party hats and celebrate. This IPA actually is finished at a gravity of 1.000, making it a satisfyingly dry IPA. It’s brewed with a clean malt bill and lager yeast but hopped like an ale: with Columbus, Centennial, Hallertauer Blanc & Citra.
Cracked this open after a long week and the dry finish at 1.000 gravity is exactly what I wanted—clean, crisp, and no cloying sweetness. Went down almost too easy for 1000th batch, but that's a good problem.
The finish at 1.000 gravity is no gimmick—this thing dries out completely on the palate, leaving just a clean, bitter snap that makes the next sip inevitable. I cracked it open to celebrate a Tuesday, and honestly, it delivered more ceremony than the occasion deserved.
Drinking this at cellar temp and the bone-dry finish is exactly what I wanted—that 1.000 gravity really shows up on the palate. It's dangerously easy to session, which is probably how I finished the six-pack in one evening.
