That 19 months in the French oak foeder really shows—there's a smooth, woody depth that settles into something almost velvety. The natural carbonation is gentle too, more like a soft fizz than a sharp bite. I'm genuinely impressed with how much character this dark ale has.
The bottle conditioning gives it such a lively fizz, and that 19-month foeder aging really rounds out the tartness without making it harsh. I cracked it open a week before the best-by date and it was perfectly smooth.
The 19 months in that French oak foeder really shows—there’s a smoothness and depth you don’t get from younger sours. Opened it with friends and the bottle was gone before dinner was even served.
