Using no less than 80kg of sourdough bread courtesy of our local Svinninge Bakery, we got to work making this sour mash Kvas TIPA. The result is a big and bold sour ale, with notes of rye coming through beautifully, and playing well with the aromatics of the Talus, Simcoe and Idaho 7 used also.

Design Notes: A photo of a shattered window at an office building. The silicone paste (probably added to prevent further collapse of the glass) is what makes this a true masterpiece.

That 80kg of sourdough bread really shows up in the body—it's thick and bready with a tangy rye bite that keeps you coming back for another sip. The sour mash gives it a proper kvas character without going overboard, and the TIPA bitterness balances it all out nicely. Definitely a wild one to share

The rye really comes through on the finish, and that sour mash tang balances the heavier malt body perfectly. You can tell they used real bread—there's a depth here that most sour IPAs just don't have. I'd buy this again without hesitation.
