The Chimay Triple, which is the trappist brewery’s most recent creation. It is golden in colour, and succeeds remarkably in blending mellowness and bitterness.
Poured it into a tulip glass and the golden color alone made me slow down. That blend of mellow sweetness with a proper bitter bite at the end is exactly what I want from a trappist triple.
That golden color is almost too pretty to pour, but once you do, the way the mellowness and bitterness hit in sequence is seriously impressive. I've had a few Trappist triples in my time, and this one stands out for how smooth it drinks despite the bite.
The bitterness here is so well balanced with the smooth maltiness that it’s dangerously easy to finish the bottle before dinner even starts. I’m not usually a triple fan, but the golden color and that mellow finish have me reaching for another.
