This beer has roots in our Copenhagen brewpub. Aged in one of the two French oak Foeders that now exist in To Øl City. A dark wort was brewed in 2020, and fermented along with a significant amount of beer that had been brewed way back in 2018.
Inspired by and reminiscent of Oud Bruin and Flanders red ales from Belgium.
Opened it on a quiet Friday night and the depth from that 2020 dark wort really shows—it's bold but somehow smooth. The French oak aging gives it a warmth that lingers nicely after each sip.
The wait was worth it—that French oak aging really shows in the finish, smooth and layered without being heavy. Dark wort from 2020 gives it a richness that feels more like a special occasion pour than a casual one.
Two years in that French oak did something special—there’s a smooth, almost vanilla-like roundness that you don’t get from standard barrel-aging. Dark and rich, it drinks dangerously easy for something brewed back in 2020. I’m already hunting for another bottle.
