That first pour hit my glass with a burst of citrus that filled the whole kitchen, and the way the Simcoe and Mosaic layers linger on the finish is just perfect. The bitterness is bold but never harsh, which is exactly what I want from a DIPA.
Opened it on a random Tuesday and the aroma hit me before I even poured—that Citra and Mosaic combo is dangerously good. The haze is thick and the bitterness stays balanced right to the last sip, which is rare for a DIPA this boozy. Definitely my new fridge staple for slow evenings.
The hop combo here is exactly what it promises—Citra and Mosaic come through juicy up front, with Simcoe adding that piney bite on the finish. It’s a bit heavy for a session beer, but for a slow evening pour it’s spot on.
