Dette er vårt 1000. parti fra To Øl City, så naturligvis ville vi ta på oss partyhattene og feire. Denne IPA-en er faktisk ferdig gjæret til en sluttekstrakt på 1.000, noe som gjør den til en tilfredsstillende tørr IPA. Den er brygget med en ren maltbase og lagergjær, men humlet som en ale: med Columbus, Centennial, Hallertauer Blanc & Citra.
Cracked this open after a long week and the dry finish at 1.000 gravity is exactly what I wanted—clean, crisp, and no cloying sweetness. Went down almost too easy for 1000th batch, but that's a good problem.

Drinking this at cellar temp and the bone-dry finish is exactly what I wanted—that 1.000 gravity really shows up on the palate. It's dangerously easy to session, which is probably how I finished the six-pack in one evening.
