The dry-hop on this Taiheke really pops against the funky wild ale base—that fresh, citrusy kick cuts through the barrel character beautifully. I cracked it open expecting just another sour, but the Saison yeast keeps it bright and lively. Worth every cent for the complexity.
That foeder aging gives it such a smooth, rounded body, and the fresh Taiheke hops cut right through with a zesty kick. The carbonation felt just right—lively but not sharp. I’m already thinking about grabbing another bottle before it’s gone.
The oak foeder aging really comes through—there's this soft, woody depth underneath the bright Taiheke hop character that makes every sip feel layered. I wasn't expecting the dry-hop to stay so fresh after all that barrel time, but it's a perfect balance of funky and zesty.
