The bitterness hits hard and fast, then settles into that resinous pine and fruit combo I keep craving. The Simcoe 803 extract really does make it stand out from the usual West Coast IPAs I grab.
The pine resin aroma jumps out of the glass before I even take a sip, and that Simcoe 803 extract delivers a bitterness that's assertive but not punishing. It's one of those beers where you catch yourself slowing down just to savor each swallow. Solid West Coast execution.
That first pour hit me with exactly what I wanted—resinous pine upfront and then that bold fruitiness lingers. The bitterness is assertive but clean, not harsh, which is rare for a West Coast IPA these days. I’m already grabbing another six-pack.
